Bob Dailey’s Key Lime Pie

Bob made this delicious confection for Mike’s 65th birthday. It was soooo good that it has become a tradition!

CRUST

1 1/2 cups graham crackers

4 tablespoons melted unsalted butter

1/4 cup sugar

Combine with fork and press into 9″ pie pan

Bake 8-10 minutes at 350.Watch carefully as it will burn.Cool

FILLING

2 14oz. cans sweetened condensed milk

2 egg yolks

1 cup fresh  lime juice (3-4 limes) — he used regular limes, not key limes

2 tablespoons lime zest

Mix and pour into crust

20-25 Minutes at 350 until set Do not brown Chill

TOPPING

1 cup whipping cream

1 teaspoon vanilla

2 tablespoons sugar

Whip slightly stiff just past peaks
