Tom K-E’s Italian Aunt Camella gave us this delicious recipe. As so many old recipes, it is pretty minimal. Not as acidy as ratatouille!

Eggplant peeled and cubed

Zucchini cubed

Tomatoes

Onions

Garlic and Garlic Salt

Black pepper

When everything is half cooked, add potatoes

  1. Heat oil
  2. Add chopped garlic and oregano
  3. Add eggplant
  4. When browned, add onion, zucchini, tomatoes, (fresh & 1 teeny can Delmonte sauce)
  5. Add fresh green beans — optional
