This was the very first cake I ever made. I was about ten years old and believe I made it for a Girl Scout badge. We enjoyed it quite often growing up because it was a quick and easy dessert to appease the hungry brood. I have no idea where the original recipe came from.
The photo shows the cake with a drizzle of maple syrup (thickened with a bit of powdered sugar). If you wanted, you could frost with a butter cream, but the cake is great unfrosted!
Applesauce Cake with sweet drizzle

INGREDIENTS
1 C. applesauce
1C. sugar
1/2 C. raisins
!/2 C. butter
2 C. flour (I use at least part whole wheat)
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon cloves
1 teaspoon baking soda
DIRECTIONS
Cream butter and add sugar.
Mix soda with applesauce and add to creamed mixture.
Mix flour and spices, then add to creamed mixture.
Add raisins and stir to combine all ingredients.
Pour into a greased tube pan (We made it in a sheet cake pan growing up)
Bake at 350 degrees for 45-50 minutes. If using sheet pan, will need to adjust baking time.
