This is a pan type of fruit cake. I made it for many years at Christmas.
Pris L. Kieber’s Lebkuchen recipe — from Bob’s Mom
2 C. flour
1T. Pumpkin pie spice – mix with flour
½ t. baking soda
1 egg – beat with 2 T. oil
½ c. brown sugar –beat with oil mix until fluffy
1/3 c. honey
1/3 c. dark molasses
Stir honey and molasses into oil mix
Add the dry ingredients and beat well.
½ C. mixed diced dried fruits
½ C. chopped almonds – add fruit and nuts to mix
Scoop into greased 15” x 10” X 1″ baking pan
Bake at 350 degrees for 15 – 20 minutes
Immediately score in squares with knife
And brush on glaze:
Beat 1 egg white
1.5 C. XXX sugar
½ t. lemon peel
1T. lemon juice
