1 C. butter
2 T. shortening
1 C. sugar
3 eggs
3 C. sifted flour
1 tsp. Baking powder
1/4 tsp. baking soda
1 tsp. vanilla
t sp. cinnamon
1 tsp. lemon juice
1 C. chopped pecans
pinch salt
- Cream butter, shortening, and sugar until light and fluffy
- Add eggs and beat thoroughly
- Stir in dry ingredients, blending well.
- Blend in Vanilla, Lemon juice, and nuts.
- Refrigerate at least one hour
- Form into 3 or 4 rolls and place on a large greased baking sheet.
- Bake at 350 degrees for 25 minutes.
- Remove from oven and slice
- Put back on cookie sheet and toast at 350 degrees for 15 minutes or longer.
