4 eggs
2 C. sugar
4.5 C. cake flour
4 drops anise oil and seeds for pan
Beat eggs until thick.
Add sugar and beat long and hard — 15 – 20 minutes!.
Add anise oil
Fold in flour
Roll out dough with springerle roller
If it doesn’t roll easily, refrigerate dough 2 hours or overnight
Use powdered sugar to flour rolling pin and surface you are rolling on
Sprinkle anise seed on greased cookie sheet
place each cookie on baking sheet with a little space all around and set overnight to dry
Bake at 300 degrees — don’t let brown….should be about 20 – 30 minutes
Store in an airtight container with a slice of apple to keep them soft. Replace apple slice as needed, if storing for several weeks (and they DO get better!)
