OK, so Mom had this in the book she made for us. I looked up Joe Frogger and these cookies are a thing in New England. They originated at Black Joe’s Tavern in Marblehead. The whole story of the Tavern is an interesting bit of history and these cookies memorialize it. Originally they were made in an iron skillet and were the size of a pancake . They keep well and could be taken on long sea voyages. I will make them one day! Please let me know if you’ve had them.
INGREDIENTS
4 1/3 C. flour
1/2 t. salt
1 1/2 t. ginger
3/4 t. nutmeg
3/4 C. shortening
1 C. light molasses
1/3 C. water
1 t. baking soda
3/4 t. cloves
1/2 t. allspice
3/4 C. sugar
1 T. rum extract
DIRECTIONS
Mix and sift flour, baking soda, salt, and spices
Cream shortening and sugar
Add molasses and rum extract. Beat well
Add flour mixture and water alternately, beating until blended
Wrap dough in foil and chill overnight
Roll dough (one half at a time) about 1/4 inch thick
Cut with 4 inch cookie cutter
That’s the end of the recipe as it was in the book…I presume you bake it now
