Well, it wouldn’t be Christmas without these ! Try varying the filling with fig or date or…..

INGREDIENTS

Cake Mixture

1/2 C. butter

1 C. brown sugar

1 C. sifted flour

1 1/2 C. oats

1/2 t. salt

Filling

1/2 C. sugar

1 C. hot water

2 T/ butter

1 T. flour

1 1/2 C. Raisins

1 1/2 T. lemon juice

1/8 t. salt

DIRECTIONS

Cream shortening (Butter) and sugar until light

Add dry ingredients. Mix well

Spread 1/2 mixture over greased (9 x 9 x 2inch) pan and press down firmly

Prepare filling by boiling all ingredients until raisins are soft

Add the filling on top of cake mixture in pan and to with the rest of the cake mix.

Bake at 350 degrees until done.
