Macaroon or Oatmeal Cake

BATTER INGREDIENTS

1.5 C. boiling water

1C. quick oats

1 t. salt

1 t. cinnamon

1 t. baking soda

1 C. oil –canola or corn

1 1/3 c. flour

1 C. brown sugar

1 C. white sugar

2 eggs

TOPPING INGREDIENTS

1 C. coconut

1 C.Chopped nuts

2 T. butter

1/2 C. Honey

1 t. vanilla extract

1T. Milk

3/4 C. brown sugar

DIRECTIONS

Pour water over oats and let stand

Mix remaining batter ingredients together and add to oats

Pour in greased flat cake pan and BAKE at 350 degrees for 50 minutes.

Make topping:

Mix together: 1/4 C. butter, 1T. Milk, 3/4 C. brown sugar

Boil 1 minute. Add nuts and coconut.

Pour over cake while still hot. Brown under broiler.

Cake will keep for days (good luck with that!!) if wrapped in foil.
