INGREDIENTS

2 medium apples

1 fennell bulb

1 red sweet pepper

2 stalks celery

Spring mix lettuces

Walanuts

Goat cheese

DIRECTIONS

  1. Cut stalks and fronds off fennel bulb (save for another recipe)
  2. Cut bulb into quarters and thinly slice
  3. Chop apple, celery, and sweet pepper
  4. Toss all ingredients
  5. Top with walnuts and goat cheese, if desired.
  6. Add a citrus or cider vinegar based dressing
